Beat the cream cheese, sugar, milk, gluten-free flour, vanilla, and salt together until smooth and fluffy. Transfer the filling to a piping bag fitted with a large round tip and set aside.

Step 2: Whisk the wet ingredients
Whisk the pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.

Step 3: Add the dry ingredients

Use block-style cream cheese
For the thickest, creamiest filling, use full-fat block-style cream cheese rather than cream cheese from a tub. 

Don’t overmix the batter
Once you add the dry ingredients, gently fold everything together just until no streaks of flour remain. A few small lumps are perfectly fine and will help keep the muffins soft and tender. 

Don’t overfill the muffin liners
Fill each liner about ¾ full to leave enough room for the muffins to rise and for the cream cheese topping. The recipe should make 12 muffins.

Can I use spreadable cream cheese?

CREAM CHEESE FILLING

8 ounces (226g) cream cheese, room temperature (block-style)

1/4 cup (50g) granulated sugar

1 tablespoon whole milk, room temperature

2 teaspoons gluten-free 1:1 flour

1/2 teaspoon vanilla extract

pinch of salt

MUFFINS

1 1/4 cups (185g) gluten-free 1:1 flour

1/4 cup (28g) blanched almond flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons pumpkin pie spice

1 teaspoon ground cinnamon

1 cup (240g) pure pumpkin puree, room temperature

1 cup (200g) granulated sugar

1/2 cup (100g) light brown sugar, lightly packed

2 large eggs, room temperature

1/2 cup (113g) avocado oil (or any neutral baking oil)

1 teaspoon vanilla extract


Instructions

PREPARE THE CREAM CHEESE FILLING

  1. Add the cream cheese, granulated sugar, milk, gluten-free 1:1 flour, vanilla extract, and salt to a medium mixing bowl. Beat with an electric hand mixer until well combined.
  2. Increase the mixer speed to medium-high and beat until the mixture is smooth and fluffy.
  3. Transfer the cream cheese filling to a piping bag fitted with a large round tip and set aside.

PREPARE THE MUFFIN BATTER

  1. Preheat the oven to 350°F (177°C). Line a standard 12-count muffin pan with paper liners and set aside.
  2. In a medium mixing bowl, whisk together the gluten-free 1:1 flour, almond flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon. Set aside.
  3. In a separate large mixing bowl, whisk together the pumpkin puree, granulated sugar, light brown sugar, eggs, avocado oil, and vanilla extract until smooth and well combined.
