Pumpkin puree

Step 1: Prepare the oat mixture
Pulse the oats 2–3 times in a food processor to break them down slightly. Transfer to a large mixing bowl and add the pumpkin seeds, dried cranberries, cinnamon, pumpkin pie spice, and salt. Stir to combine.

Step 2: Make the pumpkin maple mixture
Add the maple syrup, almond butter, brown sugar, pumpkin puree, and butter to a saucepan. Heat over medium heat, stirring frequently, until the butter is melted and the mixture is mostly smooth. Continue heating until the mixture begins to bubble, then remove from the heat and stir in the vanilla.

Step 3: Combine the wet and dry ingredients
Let the pumpkin mixture cool for about 5 minutes, then pour it over the oat mixture. Stir until the oats and mix-ins are evenly coated.

Step 4: Add the chocolate chips

Recipe Tips

Don’t over-process the oats
Pulse the oats only 2–3 times in the food processor. You want to break them down slightly so the bars hold together well while still maintaining that hearty, chewy granola bar texture. 

Heat the wet ingredients until bubbling
Once the butter has melted and the mixture is smooth, continue heating until it begins to bubble before removing it from the stove. This helps create the sticky consistency needed to bind the bars together. 

Let the mixture cool before adding the chocolate
Allow the oat mixture to cool until it’s around room temperature or just slightly warm before stirring in the chocolate chips. If the mixture is too warm, the chocolate will melt instead of remaining as distinct little chips throughout the bars. 

Press the mixture firmly into the pan
Really compact the mixture into the pan rather than simply spreading it into an even layer. Firmly pressing everything together helps the bars hold their shape once they’re sliced. 

Give the bars enough time to chill

3 1/2 cups (335g) certified gluten-free old-fashioned rolled oats

1/2 cup (65g) raw, unsalted pumpkin seeds

1/2 cup (75g) dried cranberries

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

1/4 teaspoon fine kosher salt

1/3 cup (105g) pure maple syrup

1/4 cup (65g) creamy almond butter, no added sugar

1/4 cup (50g) light brown sugar, lightly packed

1/4 cup (60g) pumpkin puree

1/4 cup (56g) unsalted butter, cubed

1 teaspoon vanilla extract

1/2 cup (120g) mini semi-sweet or dark chocolate chips

 

Notes

  1. Lightly grease an 8 x 8-inch square baking pan and line with parchment paper, leaving an overhang on the sides for easy removal.
  2. Add the oats to a food processor and pulse 2–3 times to break them down slightly.
  3. Transfer the oats to a large mixing bowl. Add the pumpkin seeds, dried cranberries, cinnamon, pumpkin pie spice, and salt and stir to combine. Set aside.
  4. Add the maple syrup, almond butter, light brown sugar, pumpkin puree, and butter to a medium saucepan. Heat over medium heat, stirring frequently, until the butter is melted and the mixture is well combined and mostly smooth. The mixture may appear slightly grainy depending on the almond butter used.
  5. Continue heating, stirring frequently, until the mixture begins to bubble. Remove from the heat and stir in the vanilla extract. Let cool for 5 minutes.
  6. Pour the warm maple-pumpkin mixture over the oat mixture and stir until everything is evenly coated.
  7. Let the mixture cool for 10–15 minutes, or until it is around room temperature or just slightly warm. This will prevent the chocolate chips from melting when added.
  8. Gently fold in the chocolate chips until evenly distributed.
  9. Transfer the mixture to the prepared pan and firmly press it into an even, compact layer. Smooth the top with an offset spatula. If desired, press a few additional chocolate chips, pumpkin seeds, or dried cranberries into the top.
  10. Freeze for 1 hour, or until firm and completely set.
  11. Use the parchment paper overhang to lift the bars from the pan. Cut into 12 rectangular bars and enjoy.

Store the granola bars in an airtight container in the refrigerator. The bars will soften at room temperature; if needed, return them to the refrigerator or freezer until firm.
