Description
This gluten-free blackberry peach crisp combines sweet, juicy peaches and fresh blackberries with warm cinnamon, cardamom, and a buttery oat and almond topping. It’s an easy summer dessert that’s delicious served warm with a scoop of vanilla ice cream.
Ingredients
CRISP TOPPING
1 cup (80g) old-fashioned rolled oats
1/2 cup (56g) blanched almond flour
1/3 cup (67g) light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
4 tablespoons (56g) unsalted butter, cold and cubed
FILLING
2 pounds (905g) fresh peaches, pitted and sliced (about 6-7 small to medium peaches)
6 ounces (170g) fresh blackberries
1/4 cup (50g) granulated sugar
2 tablespoons (25g) packed light brown sugar
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
4 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
1/8 teaspoon ground nutmeg
Instructions
PREPARE THE CRISP TOPPING
- Preheat the oven to 350°F.
- In a medium mixing bowl, stir together the rolled oats, almond flour, light brown sugar, cinnamon, and salt.
- Add the cold, cubed butter and toss to coat it in the dry mixture. Use your fingertips to press and rub the butter into the oat mixture for several minutes, until the topping is evenly moistened and resembles coarse, wet sand. There should be no large visible pieces of butter, and the mixture should hold together in clumps when pressed. Set aside.
PREPARE THE BLACKBERRY PEACH FILLING
- Slice the peaches into 1⁄4- to 1⁄2-inch wedges and place them in a large mixing bowl along with the blackberries.
- Add the granulated sugar, light brown sugar, cornstarch, cinnamon, cardamom, nutmeg, vanilla extract, and almond extract. Gently toss until the fruit is evenly coated.
BAKE THE CRISP
- Transfer the blackberry peach filling to an 8- to 9-inch ceramic baking dish, spreading it into an even layer.
- Sprinkle the crisp topping evenly over the fruit.
- Bake on the middle oven rack for 40–50 minutes, tenting loosely with foil halfway through baking if the topping is browning too quickly. The crisp is done when the topping is golden brown and the fruit filling is bubbling around the edges.
- Transfer the baking dish to a wire rack and let the crisp cool for about 30 minutes before serving.
- Serve warm with a scoop of vanilla ice cream, if desired.
Notes
- For the best texture, use ripe but slightly firm peaches so they hold their shape while baking.
