These gluten-free zucchini coffee cake muffins are soft, moist, and topped with a buttery cinnamon oat streusel for the perfect bakery-style breakfast treat. Made with freshly grated zucchini and warm spices, they’re easy to prepare and even better served warm with homemade whipped honey butter.
Ingredients
STREUSEL TOPPING
1/2 cup (74g) gluten-free 1:1 flour
1/2 cup (40g) gluten free old-fashioned rolled oats
1/2 cup (100g) light brown sugar, lightly packed
1 teaspoon ground cinnamon
pinch of fine sea salt
1/4 cup (56g) unsalted butter, melted and cooled
1/2 teaspoon vanilla extract
MUFFINS
1 1/2 cups (222g) gluten-free 1:1 flour
1/2 cup (56g) almond flour
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon fine sea salt
1/2 cup (100g) light brown sugar, lightly packed
1/4 cup (50g) granulated sugar
1/2 cup (113g) unsalted butter, melted and slightly cooled
2 large eggs, room temperature
1/4 cup (60g) sour cream, room temperature
2 teaspoons vanilla extract
1 3/4 cups (about 210g) finely grated zucchini
WHIPPED HONEY BUTTER
1/2 cup (113g) salted European butter, softened
1/4 cup (85g) honey
2 tablespoons (15g) powdered sugar
Instructions
PREPARE THE STREUSEL
- Add the gluten-free 1:1 flour, rolled oats, light brown sugar, cinnamon, and salt to a small mixing bowl and stir to combine.
- Pour the melted butter and vanilla over the dry ingredients and stir until evenly coated and the mixture is crumbly. Set aside.
PREPARE THE MUFFIN BATTER
- Preheat the oven to 350°F (177°C). Line every other well of a muffin tin with paper liners and set aside.
- In a medium bowl, whisk together the gluten-free 1:1 flour, almond flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In a separate large bowl, whisk together the light brown sugar, granulated sugar, and melted butter until well combined.
- Whisk in the eggs, followed by the sour cream and vanilla, until smooth and well combined.
- Add the dry ingredients to the wet ingredients and use a rubber spatula to gently mix until just combined and no streaks of flour remain.
- Fold in the finely grated zucchini until evenly distributed throughout the batter.
BAKE THE MUFFINS
- Fill each muffin liner about 3/4 full and top generously with the streusel.
- Bake on the center rack for 18–22 minutes, or until the tops are lightly golden and a toothpick inserted into the center of a muffin comes out with a few moist crumbs.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to continue cooling.
- Repeat with the remaining batter. The recipe makes approximately 12 muffins, but for the best results, bake one pan at a time.
PREPARE THE WHIPPED HONEY BUTTER
- Using an electric hand mixer, whip the softened butter until smooth and fluffy.
- Add the powdered sugar and honey and continue whipping until smooth and well combined.
- Serve the muffins warm with a dollop of whipped honey butter.
Store muffins in an airtight container at room temperature for 2 days.
