How to Make Gluten-Free Roasted Strawberry Cheesecake Bars

Step 1: Roast the strawberries
Preheat the oven to 375°F and line a small baking sheet or baking dish with parchment paper. Remove the stems, halve the strawberries, and toss them with the sugar and lemon juice. Arrange in an even layer and roast for 25–30 minutes, stirring halfway through, until the berries are soft and the juices are thick and syrupy.


Step 2: Make the roasted strawberry puree
Let the roasted strawberries cool for 10–15 minutes. Transfer the berries and all of their juices to a blender or food processor and blend until smooth. Measure 2/3 cup (160g) of puree and allow it to cool completely before preparing the cheesecake filling.

Step 3: Prepare the graham cracker crust
Process the gluten-free graham crackers, almonds, sugar, and salt into fine crumbs. Stir in 4 tablespoons of melted butter, adding more as needed, until the mixture is evenly moistened and resembles wet sand.


Step 4: Pre-bake the crust
Line an 8-inch square metal baking pan with parchment paper and firmly press the crumbs into an even layer on the bottom of the pan. Bake for 10 minutes at 325°F, then let the crust cool for 10–15 minutes while you make the filling.

Step 5: Mix the cheesecake base
Beat the cream cheese on low-medium speed until completely smooth and creamy. In a separate bowl, whisk together the sugar, cornstarch, freeze-dried strawberry powder, and salt, then mix the sugar mixture into the cream cheese. Add the mascarpone and mix on low speed just until smooth.

Let the strawberry puree cool completely
Warm puree can soften the cream cheese mixture and affect the final texture. For the creamiest filling, allow the puree to cool to room temperature before mixing it into the batter.
Don’t overmix the filling

2 tablespoons (25g) granulated sugar

4–6 tablespoons (56-85g) unsalted butter, melted and slightly cooled
CHEESECAKE FILLING
16 ounces (455g) full-fat/brick style cream cheese, room temperature
3/4 cup (150g) granulated sugar
1 tablespoon (8g) cornstarch
1 tablespoon (5g) freeze-dried strawberry powder
1/4 teaspoon fine sea salt
4 ounces (113g) mascarpone cheese, room temperature
2/3 cup (160g) roasted strawberry puree
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract

WHIPPED CREAM

Instructions
ROAST AND PUREE THE STRAWBERRIES
- Preheat the oven to 375°F. Line a small baking sheet or baking dish with parchment paper.
- Remove the stems and halve the strawberries. Toss with the sugar and lemon juice, then arrange the strawberries in an even layer on the prepared baking sheet.
- Roast for 25–30 minutes, stirring halfway through, until the strawberries are soft and the juices are thick and syrupy.

- Measure 2/3 cup (160 g) of the puree and set aside to cool completely before preparing the cheesecake filling.
PREPARE THE CRUST
- Reduce the oven temperature to 325°F. Line an 8-inch square metal baking pan with parchment paper, leaving an overhang on all four sides for easy removal.
- Break the graham crackers into pieces and place them in a food processor along with the almonds, sugar, and salt. Pulse until fine crumbs form.
- Transfer the crumb mixture to a medium bowl. Add 4 tablespoons of the melted butter and stir until the crumbs are evenly moistened and resemble wet sand, adding additional butter as needed.

PREPARE THE FILLING
- In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a hand mixer, beat the cream cheese on low-medium speed until completely smooth and creamy, about 2 minutes.
- Whisk together the sugar, cornstarch, freeze-dried strawberry powder, and salt until well combined and no clumps of cornstarch remain. NOTE: To make the freeze-dried strawberry powder, pulse freeze-dried strawberries in a food processor until a fine powder forms.
- Add the sugar mixture and mix on low-medium speed until combined, scraping down the sides and bottom of the bowl as needed.
- Add the mascarpone and mix on low speed just until smooth.
- Add the vanilla extract, almond extract, and cooled roasted strawberry puree. Mix on low speed until evenly incorporated.
- Add the eggs one at a time, mixing on low speed just until each egg is incorporated. Scrape down the bowl as needed, being careful not to overmix the batter.
- Pour the cheesecake filling over the cooled crust and spread into an even layer.
